Ingredients
  

Wet Ingredients

  • 1 cup Greek yogurt Use full-fat for moist cookies.
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup almond flour Can substitute with whole wheat flour.
  • 1/2 cup oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt

Optional Ingredients

  • 1/2 cup chocolate chips Can be omitted or substituted with different mix-ins.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth.
  • In another bowl, mix the almond flour, oats, baking powder, baking soda, and salt together.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • If you’re using chocolate chips, fold them into the cookie dough.
  • Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, allow dough to rest in the refrigerator for 30 minutes before baking. Store in an airtight container at room temperature for up to 5 days, or freeze individually for longer storage.
