  • 4 medium potatoes, diced Use starchy potatoes like Russets for a creamier texture.
  • 1 lb kielbasa, sliced Choose good-quality kielbasa for rich flavors.
  • 1 medium onion, chopped
  • 3 cups chicken broth
  • 2 cups shredded cheese Cheddar or your choice.
  • 1 cup heavy cream
  • Salt and pepper, to taste Adjust according to preference.
  • 2 tablespoons olive oil For cooking the onions and kielbasa.

Cooking

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the chopped onion and cook for about 4-5 minutes until soft and translucent.
  • Add the sliced kielbasa and cook for about 5-7 minutes until golden brown.
  • Stir in the diced potatoes and pour in 3 cups of chicken broth, bringing it to a boil.
  • Reduce the heat to a simmer and cook for about 15-20 minutes, or until potatoes are tender.
  • Stir in 1 cup of heavy cream and gradually mix in the 2 cups of shredded cheese until melted.
  • Season with salt and pepper to taste and serve hot.
