Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Mix-ins

  • 2 cups potato chips, crushed
  • 1 cup chocolate chips (optional) For additional sweetness

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture until fully combined.
  • Fold in the crushed potato chips and chocolate chips if you’re using them, ensuring they’re evenly dispersed.

Baking

  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10 to 12 minutes or until the edges turn golden brown and the cookies look set.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
