Ingredients
  

Meat and Vegetables

  • 1 pound ground beef can substitute with ground turkey or chicken
  • 1 cup uncooked rice can substitute with quinoa or couscous
  • 1 can diced tomatoes (15 ounces) with juice
  • 1 onion, chopped
  • 1 bell pepper, chopped or any preferred vegetable

Liquids and Seasonings

  • 2 cups beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce

Toppings

  • 2 cups shredded cheese optional; can use mozzarella, Monterey Jack, or pepper jack

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  • Add chopped onion and bell pepper to the skillet, cooking until soft.
  • Stir in the garlic powder, onion powder, salt, black pepper, and paprika. Cook for another minute.

Mixing

  • In a large mixing bowl, combine the uncooked rice, diced tomatoes (with their juice), Worcestershire sauce, and beef broth. Mix well.
  • Add the beef and vegetable mixture to the rice mixture, stirring until combined.
  • Transfer the entire mixture to a greased baking dish, spreading it evenly.

Baking

  • Cover the dish with aluminum foil and bake for 45 minutes.
  • Remove the foil and sprinkle cheese on top, if using. Bake uncovered for an additional 15 minutes, or until the rice is tender and the cheese is bubbly.
  • Allow the casserole to sit for a few minutes before serving.

Notes

For serving, consider adding fresh herbs on top, and pair with a side salad or crusty bread. This casserole can also be frozen for up to three months.
