  • 5 cups cooked and cubed (or shredded) chicken breasts
  • 1 cup sour cream
  • 2 cans condensed cream of chicken soup (10.75 ounce each)
  • 2 cups crushed Ritz crackers
  • 1/2 cup melted butter
  • 1 tablespoon poppy seeds (optional)
  • 2 cups cooked rice

Instructions
 

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a spacious 9X13 casserole dish, place your cooked and cubed or shredded chicken breasts.
  • In a mixing bowl, stir together the condensed cream of chicken soup and sour cream, then pour it over the chicken in the casserole dish.
  • In another bowl, combine the crushed Ritz crackers with the melted butter until the crackers are fully coated.
  • Sprinkle the buttery cracker mixture over the chicken and sauce evenly.
  • If using, sprinkle poppy seeds over the top of the cracker layer.

Baking

  • Place the casserole dish in your preheated oven and bake for approximately 20 to 30 minutes, until the top is golden brown and the sauce is bubbly.
  • Once done, remove from the oven and let it sit for a few minutes before serving.

Notes

Serve over fluffy cooked rice or with a side salad. Leftovers can be stored in airtight containers, refrigerated for 3 to 4 days or frozen for 2-3 months.
