Ingredients
  

For the Cookie Base

  • 1 cup unsalted butter, softened Make sure the butter is at room temperature for best results.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Spoon flour into measuring cup and level off for accuracy.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (3.4 oz) package of pistachio pudding mix This adds flavor and moisture to the bars.

Optional Mix-Ins

  • 1 cup chopped pistachios Add for extra texture.
  • 1 cup white chocolate chips Add for additional sweetness.

Instructions
 

Preparation and Mixing

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs and vanilla extract to the butter mixture, beating until well combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, and pistachio pudding mix.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined to avoid overmixing.
  • If using, fold in the chopped pistachios and white chocolate chips.

Baking

  • Spread the cookie batter evenly in the prepared baking pan.
  • Bake in the preheated oven for 25-30 minutes or until the edges turn golden brown and a toothpick inserted in the center comes out clean.
  • Remove the pan from the oven and allow it to cool for about 10 minutes.
  • Lift the bars out using the parchment paper and let them cool completely on a wire rack before slicing into squares.
