Cookie Dough Ingredients

  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Use weight for more precise measurements.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt Reduce if using salted pistachios.
  • 1 cup pistachios, shelled and chopped Consider toasting for enhanced flavor.

Cream Cheese Filling

  • 1 cup powdered sugar
  • 1/2 cup cream cheese, softened
  • 1 teaspoon vanilla extract For filling.
  • 1 few drops green food coloring Optional, for color enhancement.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chopped pistachios until evenly distributed.

Baking

  • Use a tablespoon to scoop the dough onto the prepared baking sheets, leaving space between each cookie for spreading.
  • Bake for 10-12 minutes or until the edges are light golden brown. Remove from the oven and let them cool on the sheets for about 5 minutes before transferring to a wire rack to cool completely.

Filling

  • While the cookies cool, prepare the filling. In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Add green food coloring, if desired, to achieve a light green hue.
  • Once the cookies are cool, spread the cream cheese filling on the flat side of one cookie and top it with another cookie to create a sandwich.
