Ingredients
  

  • 1 1/2 cups All-purpose flour
  • 1 cup Unsalted butter softened
  • 1 cup Granulated sugar
  • 4 eggs Large eggs
  • 1 cup Ground pistachios (about 150g)
  • 1/2 cup Whole milk
  • 1 1/2 teaspoons Vanilla extract
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, ensuring each egg is well incorporated before adding the next.
  • Stir in the ground pistachios and vanilla extract.
  • Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix gently until just combined.
  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Notes

If you want to add a frosting, cream cheese frosting works wonderfully, or just garnish with more pistachios for a beautiful finish!
