  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 1/2 cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • to taste pink food coloring Add gradually for desired shade.
  • 1/4 cup granulated sugar (for rolling)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and white sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and almond extract until well combined.
  • Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.
  • Add a few drops of pink food coloring to the dough and mix until your desired shade is achieved.
  • Roll the dough into balls about one inch in diameter and roll each in granulated sugar.
  • Flatten each cookie slightly with the bottom of a glass or your palm.

Baking

  • Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container, layered with parchment paper to prevent sticking. Can be frozen for up to three months.
