Pink Lemonade Cookies
Delightful cookies infused with refreshing pink lemonade flavor, perfect for any occasion.
Ingredients
For the cookie dough
- 1 cup unsalted butter, softened Ensure it's at room temperature.
- 1 cup granulated sugar
- 1 tablespoon lemon zest Freshly grated for best flavor.
- 2 tablespoons pink lemonade concentrate
- 1 large egg At room temperature.
- 2.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon baking powder
- 0.5 teaspoon salt
- 1 cup powdered sugar (for coating)

Instructions
Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the lemon zest and pink lemonade concentrate, mixing until well combined.
- Beat in the egg until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
Baking
- Using a cookie scoop or your hands, shape the dough into small balls and place them on the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes. Then, transfer them to a wire rack to cool completely.
- Once cooled, roll the cookies in powdered sugar for a sweet finish. If desired, sprinkle with colorful sprinkles for added decoration.

Notes
For best results, chill the dough for 30 minutes if it's too soft and sticky. Adjust the amount of lemon concentrate for a stronger flavor if desired.
