Preparation

  • Wash the habanero peppers and remove the stems. If you prefer a milder sauce, you can deseed the peppers.

Blending

  • In a blender or food processor, combine the pineapple chunks, habanero peppers, white vinegar, garlic, salt, lime juice, brown sugar, and onion.
  • Blend the mixture on high until you achieve a smooth consistency or to your preferred texture.

Cooking

  • Pour the blended mixture into a saucepan and bring it to a simmer over medium heat, stirring occasionally.
  • Allow the sauce to simmer for about 15-20 minutes to meld the flavors together.

Cooling and Storing

  • After simmering, remove from heat and let it cool.
  • Pour the sauce into sterilized bottles or jars for storage, leaving some space at the top.
  • Let it cool completely before sealing and for the best flavor, let it sit for at least 24 hours before using.
