Ingredients
  

For the glaze

  • 1 cup fresh pineapple, diced
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce (or low-sodium soy sauce)
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper

For the salmon

  • 4 pieces salmon fillets Choose high-quality, fresh fillets.
  • 1 tablespoon chopped green onions for garnish
  • 1 lime wedges for serving

Instructions
 

Preparation

  • In a mixing bowl, combine the diced pineapple, brown sugar, soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, sesame oil, and black pepper. Mix until well combined.
  • Season the salmon fillets lightly with salt and pepper. Optionally, marinate the salmon in half of the glaze for about 15-30 minutes for extra flavor.

Cooking

  • Preheat your grill or a grill pan over medium-high heat. If using an oven, preheat to 400°F (200°C).
  • Place the salmon fillets on the grill or in the heated pan, skin-side down. Cook for about 4-5 minutes, then brush the tops with the pineapple glaze.
  • Flip the salmon fillets carefully and glaze the other side. Cook for another 3-4 minutes until the salmon flakes easily with a fork and has a nice caramelized finish.
  • If baking, place the glazed salmon in a baking dish and bake for about 12-15 minutes, brushing with glaze halfway through cooking.

Serving

  • Once cooked, remove the salmon from the heat and let it rest for a couple of minutes. Garnish with chopped green onions and serve with lime wedges.

Notes

To enhance flavor, consider using fresh pineapple instead of canned. Adjust the sweetness of the glaze according to your preference. Let the salmon rest after cooking to ensure juiciness.
