Ingredients
  

Main Ingredients

  • 1 can crushed pineapple, drained Ensure it's well-drained for best results.
  • 1 cup shredded coconut
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional) Can add extra flavor.
  • 1/2 cup chopped nuts (such as walnuts or pecans, optional) Add for crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a baking dish or pan with butter.
  • In a large mixing bowl, combine the crushed pineapple, shredded coconut, and brown sugar. Mix well.
  • In another bowl, whisk together the flour, baking powder, and ground cinnamon if using. Slowly add to the pineapple mixture and stir until just combined.
  • In a small bowl, whisk the eggs and vanilla extract together, then pour into the batter. Add the melted butter and mix until smooth.
  • If using, fold in the nuts until well distributed.
  • Pour the batter into the prepared baking dish and smooth the top.

Baking

  • Bake in the preheated oven for about 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, allow to cool for a few minutes before slicing.

Notes
