Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the almond paste and powdered sugar. Break apart the almond paste until you achieve a crumbly texture.
  • Add in the egg, almond extract, and a pinch of salt. Mix to create a smooth dough, using a hand mixer or your hands.

Forming and Baking Cookies

  • Take small portions of dough (about 1 tablespoon) and roll them into balls.
  • Roll each ball in pine nuts, ensuring they are evenly coated. Press lightly to stick the nuts.
  • Place the cookie balls on the prepared baking sheet, leaving space between each.
  • Bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to finish cooling.
