Ingredients
  

For the Cookies

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened at room temperature
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract

For the Ganache Filling

  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped use high-quality chocolate

For Garnish

  • 1/4 cup crushed peppermint candies for garnishing the sandwiches

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line baking sheets with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and peppermint extract.
  • Gradually mix in the dry ingredients until just combined.
  • Scoop the dough and roll into balls, then flatten slightly and place on the baking sheets.

Baking

  • Bake for 10 to 12 minutes until the edges are faintly golden.
  • Allow cookies to cool completely on the baking sheets.

Preparing Ganache

  • Heat the heavy cream in a small saucepan over medium heat until simmering.
  • Pour the hot cream over the chopped chocolate and let it sit for 2 minutes.
  • Stir until smooth and let cool slightly.

Assembly

  • Take one cookie, add a generous spoonful of ganache on the top, and place another cookie on top to create a sandwich.
  • Optional: Roll the edges of the sandwiches in crushed peppermint candies for garnish.
