Ingredients
  

For the brownie base

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup white chocolate peppermint bits for brownie batter

For the ganache

  • 1/3 cup milk
  • 1/3 cup butter
  • 1 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips or almond bark

For garnishing

  • 1 cup white chocolate peppermint bits for garnish
  • to taste Crushed candy canes for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan with non-stick spray or parchment paper.
  • In a large mixing bowl, cream together the melted butter and sugar until light and fluffy, about two minutes.
  • Add the eggs and vanilla extract, mixing well until thoroughly combined.
  • In a separate bowl, whisk together the dry ingredients: cocoa powder, flour, salt, and baking powder.
  • Gradually incorporate the dry ingredients into the butter-sugar mixture, mixing well after each addition to avoid lumps.
  • Fold in half a cup of the white chocolate peppermint bits.

Baking

  • Spread the batter evenly into the prepared baking dish.
  • Bake for about 25 to 30 minutes, until the center feels firm and the edges begin to pull away from the pan.
  • Allow the brownies to cool completely in the pan.

Making the ganache

  • In a medium saucepan, combine milk, butter, and sugar over medium heat, stirring until melted and smooth.
  • Remove from heat and add vanilla extract and white chocolate chips, stirring continuously until fully melted.
  • Pour the ganache over the cooled brownies, smoothing for even coverage.
  • Sprinkle the remaining peppermint bits and crushed candy canes on top.
  • Allow the ganache to set before cutting into squares for serving.
