Ingredients
  

  • 2 cups all-purpose flour
  • 1/3 cup white sugar
  • 1/4 teaspoon salt
  • 2/3 cup unsalted butter cold
  • 3 large eggs
  • 1 cup light corn syrup
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 1 2/3 cups chopped pecans

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line a 9x13 inch baking pan with heavy foil or parchment paper and spray with cooking spray.
  • In a large mixing bowl, combine flour, 1/3 cup sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  • Press the crust mixture into the bottom of the prepared baking pan.
  • Bake the crust for 20 minutes or until lightly golden.
  • In another bowl, whisk together eggs, corn syrup, 1/2 cup white sugar, brown sugar, melted butter, and vanilla extract until smooth.
  • Stir in the chopped pecans.
  • Pour the pecan filling over the baked crust and spread evenly.
  • Bake for an additional 25 to 30 minutes until the filling is set but slightly jiggly in the center.
  • Allow to cool completely in the pan before lifting out and slicing into bars.
