Cookie Dough Ingredients

  • 1 cup peanut butter Use creamy or natural peanut butter.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar Packed brown sugar is recommended.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Topping Ingredients

  • 12 pieces mini Reese's cups or peanut butter cups For topping each cookie.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth and creamy.
  • Scoop tablespoon-sized amounts of dough and roll into balls. Place on a baking sheet lined with parchment paper, spaced about 2 inches apart.

Baking

  • Bake in preheated oven for about 8-10 minutes, until edges are lightly golden.
  • Immediately press a mini Reese's cup into the center of each cookie after removing from the oven.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cooled cookies in an airtight container for up to a week. For longer storage, freeze with parchment paper between layers.
