Ingredients
  

Wet Ingredients

  • 1 cup peanut butter Use good quality peanut butter for best flavor.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 teaspoon baking soda
  • 2 cups rolled oats To make gluten-free, use gluten-free rolled oats.
  • a pinch salt

Optional Ingredients

  • 1/2 cup chocolate chips Optional, can be substituted with nuts or dried fruit.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth.
  • Add in the egg and vanilla extract, then mix until well incorporated.
  • In a separate bowl, combine the rolled oats, baking soda, and salt. Mix the dry ingredients together.
  • Gradually add the dry ingredients to the peanut butter mixture. Stir until well combined. If using chocolate chips, fold them in at this stage.

Baking

  • Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, spacing them about two inches apart.
  • Flatten each cookie slightly with the back of a fork for a classic look.
  • Bake in the oven for 10-12 minutes, or until the edges start to turn golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use good quality peanut butter. Avoid overmixing for softer cookies. Consider chilling the dough for about 30 minutes before baking.
