  • 1/2 cup milk Any type of milk works, including non-dairy alternatives.
  • 1 cup light brown sugar Packed brown sugar adds sweetness.
  • 1 cup peanut butter Creamy or crunchy, based on preference.
  • 1 teaspoon pure vanilla extract Enhances the flavor of the cookies.
  • 3 cups old-fashioned oats Should be regular oats, not instant.

Preparation

  • In a medium saucepan, combine the butter, milk, and light brown sugar over low heat.
  • Stir to melt and blend the ingredients until smooth.
  • Increase the heat slightly to bring the mixture to a rapid boil for one minute.
  • Remove the saucepan from heat and stir in the peanut butter until smooth.
  • Add the pure vanilla extract and mix well.
  • Gradually stir in the old-fashioned oats until all oats are evenly coated.
  • Drop spoonfuls of the mixture onto wax paper and allow to cool completely.

Notes
