Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Fruity Additions

  • 1 to 1 1/2 cups fresh peaches, peeled and diced

Optional Add-ins

  • 1 teaspoon cinnamon (optional)
  • 1/2 cup chopped nuts (optional)

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this mixture aside for later.
  • In a large bowl, cream together the softened butter and sugar using an electric mixer on medium speed until light and fluffy.

Mixing

  • Add the egg and vanilla extract to the butter-sugar mixture, mixing until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

Adding Peaches

  • Gently fold in the diced peaches and any optional ingredients like cinnamon or nuts with a spatula until they are evenly distributed throughout the dough.

Baking

  • Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

For best results, use ripe peaches. You can substitute with canned or frozen peaches, but drain and dry them first. Cookies can be served warm or at room temperature, and pair well with vanilla ice cream or a drizzle of honey.
