Ingredients
  

Filling

  • 2 cups fresh peaches, peeled and diced Use ripe peaches for best flavor.
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Rolling and Frying

  • 10 pieces egg roll wrappers Keep unused wrappers covered with a damp cloth.
  • Oil for frying Heat oil to 350°F (175°C).
  • Powdered sugar for dusting (optional)
  • Vanilla ice cream (for serving, optional) Pairs well with the warm egg rolls.

Preparation

  • In a mixing bowl, combine the diced peaches, granulated sugar, cinnamon, lemon juice, and cornstarch. Gently mix until the peaches are evenly coated. Allow the mixture to sit for about 10 minutes.
  • Lay an egg roll wrapper on a clean surface, with one corner facing you. Spoon about 2 tablespoons of the peach filling onto the center of the wrapper.
  • Fold the bottom corner over the filling, then fold the sides inward. Roll the wrapper tightly away from you to enclose the filling; seal the edges with a little water.

Cooking

  • Heat oil in a deep pan to about 350°F (175°C). Carefully place egg rolls in the hot oil, frying for 3-4 minutes, or until golden brown, turning occasionally.
  • Remove the egg rolls with a slotted spoon and place them on paper towels to drain excess oil.

Serving

  • Dust with powdered sugar if desired and serve warm.

Notes

For variations, consider adding chopped nuts, using different fruits or spices, or mixing cream cheese into the filling. To store, cool completely and place in an airtight container with parchment paper between layers. Can be reheated in the oven.
