Ingredients
  

Crust and Topping

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling

  • 8 ounces cream cheese, softened Ensure it's at room temperature for a smooth mixture.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream Whip until stiff peaks form.

Peach Filling

  • 2 cups fresh peaches, diced Keep extra slices for garnish if desired.
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar

Assembly

  • Ice cream cones Use your preferred type.
  • Optional: whipped cream for topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until it resembles wet sand.
  • Spread the crumb mixture evenly on a baking sheet and bake for about 10 minutes, or until golden brown. Allow to cool completely.
  • In another bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and mix well.
  • Stir in vanilla extract. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  • In another bowl, toss the diced peaches with cinnamon and brown sugar and let sit for about 10 minutes.

Assembly

  • In each ice cream cone, layer some cheesecake filling followed by a layer of peaches. Sprinkle the cooled graham cracker crumble on top and repeat the layers until cones are full.
  • Optionally, top each cone with whipped cream.
  • Chill the assembled cones in the refrigerator for at least 30 minutes before serving.

Notes

For the best flavor, use ripe peaches. Store in an airtight container in the refrigerator; consume within 2-3 days.
