  • 1 cup pastina (small pasta)
  • 4 cups chicken or vegetable broth Homemade is preferred for richer flavor.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 stalk celery, diced
  • 1 cup fresh spinach, chopped (or any leafy green) Other greens like kale or Swiss chard can be used.
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)
  • Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preparation

  • Heat the olive oil over medium heat in a large pot.
  • Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
  • Pour in the chicken or vegetable broth and bring to a gentle boil over medium-high heat.
  • Once boiling, add the pastina and cook according to package instructions (generally 8-10 minutes) until tender.
  • Stir in the chopped spinach and let it wilt for about 2 minutes.
  • Season with salt and pepper to taste.
  • Remove from heat, ladle into bowls, and serve warm.
  • Garnish with grated Parmesan cheese and chopped parsley if desired.
