Ingredients
  

  • 2 boneless skinless chicken breasts
  • 200 g 7 oz pasta (penne, spaghetti, or fettuccine)
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 1 can 14.5 oz diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream optional
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

Prepare the Chicken

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium heat until hot.
  • Cook the chicken breasts for 6-8 minutes on each side until golden brown and cooked through.
  • Once the chicken is cooked through and golden brown, remove it from the skillet and set it aside on a plate.

Cook the Pasta

  • Boil salted water in a large pot.
  • Add pasta and cook according to package instructions (8-10 minutes for al dente).
  • Drain the pasta and set it aside, keeping some pasta water.

Make the Sauce

  • If needed, add a bit more olive oil to the skillet.
  • Sauté garlic and onion for 2-3 minutes.
  • Add bell peppers (optional) and cook for 2 more minutes.
  • Stir in diced tomatoes and chicken broth.
  • Simmer for 5-7 minutes.

Combine the Pasta and Chicken

  • Slice the chicken into strips.
  • Add pasta to the skillet and toss to coat with the sauce.
  • Add the chicken and, for a creamy version, pour in heavy cream.
  • Stir and adjust the sauce with pasta water if needed.

Serve and Garnish

  • Serve hot, garnished with fresh basil or parsley.
  • Add grated Parmesan if desired.
