- 2 boneless skinless chicken breasts
- 200 g 7 oz pasta (penne, spaghetti, or fettuccine)
- 3 tbsp olive oil
- 4 cloves garlic minced
- 1 medium onion diced
- 1 can 14.5 oz diced tomatoes
- 1/2 cup chicken broth
- 1/4 cup heavy cream optional
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Prepare the Chicken
Season the chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium heat until hot.
Cook the chicken breasts for 6-8 minutes on each side until golden brown and cooked through.
Once the chicken is cooked through and golden brown, remove it from the skillet and set it aside on a plate.
Cook the Pasta
Boil salted water in a large pot.
Add pasta and cook according to package instructions (8-10 minutes for al dente).
Drain the pasta and set it aside, keeping some pasta water.
Make the Sauce
If needed, add a bit more olive oil to the skillet.
Sauté garlic and onion for 2-3 minutes.
Add bell peppers (optional) and cook for 2 more minutes.
Stir in diced tomatoes and chicken broth.
Simmer for 5-7 minutes.
Combine the Pasta and Chicken
Slice the chicken into strips.
Add pasta to the skillet and toss to coat with the sauce.
Add the chicken and, for a creamy version, pour in heavy cream.
Stir and adjust the sauce with pasta water if needed.
