  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • 1 unit zest of 1 lemon

Instructions
 

Preparation

  • Pat the flounder fillets dry with paper towels.
  • Season both sides of each fillet with salt and pepper.
  • Spread the flour on a plate and dredge the fillets in it, shaking off any excess.

Cooking

  • In a large skillet, heat 2 tablespoons of butter over medium heat.
  • Once melted and foamy, add the flounder fillets.
  • Cook for about 3-4 minutes on each side, or until golden brown and cooked through.
  • Remove the fillets and cover with foil to keep warm.
  • In the same skillet, add the remaining butter and cook until it turns a light brown color (about 3-5 minutes).
  • Add lemon juice and zest to the browned butter and stir well.
  • Pour the brown butter sauce over the flounder and garnish with chopped parsley before serving.
