  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened Use room temperature for better mixing
  • 1 cup grated cheese (cheddar or parmesan) Choose your favorite cheese
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon fresh herbs (like rosemary or thyme), chopped
  • ¼ teaspoon black pepper
  • 1 large egg yolk
  • 2 tablespoons cold water Add gradually if dough is dry

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the softened butter and grated cheese. Mix until you achieve a creamy consistency.
  • Add the egg yolk and blend well into the mixture.

Mixing Dry Ingredients

  • In another bowl, whisk together the flour, baking powder, salt, black pepper, and chopped herbs.
  • Gradually incorporate the flour mixture into the butter and cheese mixture, blending until a dough begins to form.
  • If the dough feels dry, add cold water a little at a time until it becomes cohesive.

Shaping and Baking

  • Roll the dough into small balls, about one inch in diameter, and place them on the lined baking sheet, spacing them about two inches apart.
  • Flatten each ball slightly with your fingers or the bottom of a glass.
  • Bake for 15-20 minutes or until the edges turn a golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
