  • 1/2 teaspoon baking soda Helps to give the cookies a light, airy texture.
  • 1/4 teaspoon salt Balances the sweetness.
  • 1/2 teaspoon cinnamon Optional for a festive aroma.

Wet Ingredients

  • 1/4 cup coconut oil, melted Adds moisture and a hint of richness.
  • 1/4 cup honey or maple syrup Natural sweetener without refined sugar.
  • 1 teaspoon vanilla extract Enhances overall flavor.
  • 1 large egg (optional) Helps bind the ingredients.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine almond flour, baking soda, salt, and cinnamon (if using).
  • Add melted coconut oil, honey (or maple syrup), and vanilla extract. Mix until a soft, slightly sticky dough forms.
  • If using an egg, add it to the mixture and stir until well combined.
  • Dust your countertop with almond flour, roll out the dough between parchment paper to 1/4 inch thick.
  • Use cookie cutters to cut out desired shapes and transfer them to a lined baking sheet.
  • Bake for 8-10 minutes, until edges are golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to wire racks.
