Ingredients
  

For the chicken

  • 8 pieces chicken drumsticks Choose uniformly sized for even cooking.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • to taste salt and pepper

For the rice

  • 1 cup long-grain white rice Rinse under cold water until clear.
  • 2 cups chicken broth Homemade broth enhances flavor.
  • 1 cup sweet corn Frozen or canned.
  • 2 tablespoons butter
  • optional Fresh parsley For garnish.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top.
  • In a large bowl, combine olive oil, garlic powder, onion powder, paprika, dried thyme, salt, and pepper to create a paste.
  • Add the chicken drumsticks and toss until well coated with the seasoning mixture.

Baking

  • Arrange the chicken drumsticks on the wire rack and bake for about 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C).

Cooking the Rice

  • While the chicken bakes, rinse the rice under cold water until the water runs clear.
  • In a medium saucepan over medium heat, melt the butter. Add the rinsed rice and stir for 1-2 minutes until slightly toasted.
  • Pour in the chicken broth, add a pinch of salt, bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes or until rice is tender.
  • In the last five minutes of cooking, add in the corn and stir gently to combine.

Serving

  • Once chicken is done, remove from oven and let it rest for a few minutes.
  • Fluff the rice with a fork and serve alongside the chicken drumsticks. Garnish with fresh parsley if desired.
