Ingredients
  

Main Ingredients

  • 4 pieces chicken thighs or breasts Thighs are juicier; breasts are leaner.
  • 1 cup long-grain white rice Use long-grain for best results.
  • 2 cups chicken broth Use low-sodium if preferred.
  • 1 medium onion, chopped Adds flavor base.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 cup mixed vegetables Such as peas, carrots, or bell peppers.

Seasonings

  • 1 teaspoon paprika For flavor and color.
  • 1 teaspoon dried thyme Enhances herby flavor.
  • to taste Salt and pepper To taste according to preference.
  • 2 tablespoons olive oil For sautéing onions and garlic.
  • Fresh parsley for garnish (optional) Adds brightness when serving.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe pan or baking dish, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onions become translucent.
  • Season the chicken with salt, pepper, paprika, and thyme. Add the chicken pieces to the pan and brown them on both sides, about 3-4 minutes per side.
  • Remove the chicken from the pan and set it aside on a plate.
  • In the same pan, add the rice, stirring it in with the onions and garlic for about one minute until it becomes slightly translucent.
  • Pour in the chicken broth and add the mixed vegetables. Stir everything together.
  • Place the chicken back on top of the rice mixture.
  • Cover the pan tightly with aluminum foil or a lid to trap the steam.

Baking

  • Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the rice has absorbed the broth.
  • Once done, remove the dish from the oven and let it sit for 5-10 minutes before serving. Garnish with fresh parsley if desired.

Notes

For extra flavor, consider marinating the chicken with spices beforehand. Use a mixture of fresh and dried herbs to enhance the dish.
