Ingredients
  

Oreo Cookie Crust

  • 1 ½ cups crushed Oreo cookies around 18 cookies, 200g
  • ¼ cup melted salted butter 56g

Brownie Layer

  • 2 large eggs at room temperature 112g
  • ½ cup granulated sugar 100g
  • ½ cup packed light brown sugar 100g
  • ½ cup or 1 stick softened salted butter 113g
  • 2 tsp vanilla extract 8g
  • ½ cup all-purpose flour 65g
  • cup unsweetened cocoa powder 33g
  • ¼ tsp baking powder

Oreo Cheesecake Layer

  • 1 cup 8 oz cream cheese at room temperature (226g)
  • cup granulated sugar 133g
  • 1 tsp vanilla extract 4g
  • 1 large egg at room temperature 56g
  • ½ cup chopped Oreos about 6 cookies, 70g

Instructions
 

Step 1: Preparing the Oreo Crust

  • Preheat the oven to 350°F (175°C) and line an 8x8-inch square pan with parchment paper. Mix 1 ½ cups crushed Oreo crumbs with ¼ cup melted butter. Press the mixture into the pan and bake for 8 minutes. Let it cool.

Step 2: Making the Brownie Batter

  • Beat 2 eggs, ½ cup granulated sugar, and ½ cup brown sugar until creamy. Add ½ cup softened butter and 2 tsp vanilla extract, then mix. Sift ½ cup flour, ⅓ cup cocoa powder, and ¼ tsp baking powder, and fold into the mixture. Set aside.

Step 3: Preparing the Oreo Cheesecake Layer

  • Beat 8 oz cream cheese until smooth, then mix in ⅔ cup sugar and 1 tsp vanilla extract. Add 1 egg and mix until smooth. Fold in ½ cup chopped Oreos.

Step 4: Assembling and Swirling

  • Spoon alternating layers of brownie batter and cheesecake filling over the crust. Swirl together with a knife. Bake at 350°F (175°C) for 40-45 minutes. Let cool completely before cutting. For quicker cooling, freeze for an hour. Enjoy chilled!
