These Oreo Cheesecake Brownies combine the best of three dessert favorites: rich brownies, creamy cheesecake, and crunchy Oreos. Perfect for any occasion, they are easy to make and sure to impress.
Preheat the oven to 350°F (175°C) and line an 8x8-inch square pan with parchment paper. Mix 1 ½ cups crushed Oreo crumbs with ¼ cup melted butter. Press the mixture into the pan and bake for 8 minutes. Let it cool.
Step 2: Making the Brownie Batter
Beat 2 eggs, ½ cup granulated sugar, and ½ cup brown sugar until creamy. Add ½ cup softened butter and 2 tsp vanilla extract, then mix. Sift ½ cup flour, ⅓ cup cocoa powder, and ¼ tsp baking powder, and fold into the mixture. Set aside.
Step 3: Preparing the Oreo Cheesecake Layer
Beat 8 oz cream cheese until smooth, then mix in ⅔ cup sugar and 1 tsp vanilla extract. Add 1 egg and mix until smooth. Fold in ½ cup chopped Oreos.
Step 4: Assembling and Swirling
Spoon alternating layers of brownie batter and cheesecake filling over the crust. Swirl together with a knife. Bake at 350°F (175°C) for 40-45 minutes. Let cool completely before cutting. For quicker cooling, freeze for an hour. Enjoy chilled!
