  • 4 pieces boneless, skinless chicken breasts Substitute with skinless chicken thighs for more flavor.
  • 1 cup orange marmalade Use high-quality marmalade for the best flavor.
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes Optional for heat.
  • to taste Fresh parsley for garnish Optional.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine the orange marmalade, soy sauce, rice vinegar, minced ginger, garlic, black pepper, olive oil, and lemon juice. Whisk until smooth.
  • Place the chicken breasts in a baking dish in a single layer and season lightly with salt and pepper if preferred.
  • Pour the orange marmalade mixture over the chicken, ensuring each piece is well coated.
  • Sprinkle red pepper flakes over the chicken if desired.

Cooking

  • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown on top.
  • Let the chicken rest for a few minutes before slicing.
  • Drizzle any excess glaze from the baking dish over the chicken before serving.

Notes

For more depth, marinate the chicken in the glaze for at least an hour before cooking. Feel free to grill the chicken for a smoky flavor, applying the glaze at the end of cooking.
