Cake Ingredients

  • 1 box vanilla or white cake mix
  • 1 package orange gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup orange sherbet
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: orange slices for garnish

Preparation

  • Preheat your oven as per the instructions on your cake mix box. Prepare a 9x13 inch baking pan by greasing it lightly.
  • Mix the cake batter according to the package instructions, pour the batter into your prepared pan, and bake for 25 to 30 minutes, checking doneness with a toothpick.
  • While your cake is baking, prepare the orange gelatin by dissolving the powder in 1 cup of boiling water and then adding 1 cup of cold water. Let it cool slightly.
  • Once the cake is done, let it cool for about 10 minutes. Poke holes all over the top using a fork.
  • Pour the cooled orange gelatin mixture evenly over the cake, allowing it to seep into the holes.
  • Let the cake cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Topping & Serving

  • In a mixing bowl, whip together 1 cup of heavy cream, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.
  • Spread the whipped cream mixture generously over the chilled cake.
  • Add scoops of orange sherbet on top of the whipped cream, garnish with orange slices if desired.
  • Slice the cake and serve chilled.

Notes
