Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.

Cooking

  • Stir in the vegetable broth, soy sauce, and Dijon mustard, mixing well. Bring the mixture to a gentle simmer.
  • Add the quartered onions to the pot, ensuring they are submerged in the broth.
  • Sprinkle in the paprika, cayenne pepper, salt, and pepper. Stir to combine all the flavors.
  • Cover the pot and reduce the heat to low. Let the onions simmer for 25-30 minutes, or until they become soft and tender.
  • Once cooked, remove the pot from the heat. Use a slotted spoon to transfer the onions to a serving dish, allowing excess broth to drip off.
  • Drizzle some of the broth over the onions for added flavor before garnishing with chopped parsley.

Serving

  • Serve the onion boil warm, alongside lemon wedges.
