  • 6 medium-sized onions Peeled and quartered
  • 4 cups vegetable broth Low-sodium preferred
  • 1 tablespoon olive oil For sautéing
  • 3 cloves garlic Minced
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh thyme Chopped
  • 1 tablespoon fresh parsley Chopped
  • 1 cup chopped carrots
  • 1 cup chopped bell peppers
  • 2 leaves bay leaves

Preparation

  • Peel and quarter the onions and set them aside.

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about a minute until fragrant.
  • Pour in the vegetable broth, then stir in the quartered onions, chopped carrots, and bell peppers.
  • Season with sea salt, black pepper, paprika, thyme, and parsley. Add the bay leaves.
  • Bring the mixture to a gentle boil, reduce heat to low, cover the pot and let it simmer for about 30-40 minutes, stirring occasionally.
  • Once the vegetables are fork-tender and the flavors meld, remove the pot from heat.
  • Discard the bay leaves before serving.
