One Pot Taco Pasta

A quick and satisfying meal combining bold taco flavors with comforting pasta, all made in one pot in about 20 minutes.

Ingredients
  

  • 1 pound ground beef
  • ½ cup diced onion
  • 2 cloves garlic (minced)
  • 2 tablespoons taco seasoning
  • 3 cups chicken broth
  • 1 cup salsa
  • ½ pound large shell pasta
  • 1 cup grated cheddar cheese
  • 1 cup grated Monterey Jack cheese
  • Kosher salt and freshly ground black pepper, to taste

Instructions
 

  • Heat a large skillet over medium heat. Cook ground beef until halfway browned, then add diced onions and cook until beef is no longer pink. Drain excess grease.
  • Add minced garlic and cook for about 30 seconds. Stir in taco seasoning, salsa, and chicken broth.
  • Once simmering, add large shell pasta. Cover and cook, stirring occasionally, for 10-15 minutes until pasta is tender and most liquid is absorbed.
  • Stir in grated cheddar and Monterey Jack cheeses until melted and creamy. Season with salt and pepper to taste.
  • Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of broth or water if needed.
