Ingredients
  

  • 12 ounces dry pasta penne, fusilli, or spaghetti work great
  • 1 can (14 ounces) diced tomatoes undrained
  • 4 cups vegetable or chicken broth
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • 1 cup fresh spinach or kale roughly chopped
  • 0.5 cup grated Parmesan cheese
  • to taste salt and freshly ground black pepper
  • 2 tablespoons olive oil

Instructions
 

  • Heat the olive oil in a large pot or deep skillet over medium heat.
  • Add chopped onion and minced garlic. Cook for 3-4 minutes until softened and fragrant.
  • Pour in broth and diced tomatoes. Add dry pasta ensuring it is mostly submerged.
  • Bring to a boil, then reduce heat to medium-low. Simmer uncovered for 10-12 minutes, stirring occasionally.
  • When pasta is almost tender, stir in spinach or kale. Cook until wilted, about 2-3 minutes.
  • Remove from heat. Stir in Parmesan cheese and season with salt and pepper to taste.
  • Serve immediately and enjoy.
