dry pasta
penne, fusilli, or spaghetti work great

diced tomatoes
undrained

vegetable or chicken broth

chopped onion

garlic

fresh spinach or kale
roughly chopped

grated Parmesan cheese

salt and freshly ground black pepper

Instructions
Heat the olive oil in a large pot or deep skillet over medium heat.
Add chopped onion and minced garlic. Cook for 3-4 minutes until softened and fragrant.
Pour in broth and diced tomatoes. Add dry pasta ensuring it is mostly submerged.
Bring to a boil, then reduce heat to medium-low. Simmer uncovered for 10-12 minutes, stirring occasionally.
When pasta is almost tender, stir in spinach or kale. Cook until wilted, about 2-3 minutes.
Remove from heat. Stir in Parmesan cheese and season with salt and pepper to taste.
Serve immediately and enjoy.
