Ingredients
  

For the Soup Base

  • 1 to 2 tbsp olive oil or your preferred oil
  • 1 lb ground beef You can substitute with ground turkey for a leaner option.
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes, not drained (15 oz)
  • 1 can tomato sauce or tomato puree (15 oz)
  • 1/3 cup tomato paste (from half a 6 oz can)
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 1 tbsp Italian seasoning blend
  • 1 tsp sea salt, plus more as needed
  • to taste black pepper
  • 1 to 2 cups water, to adjust texture
  • 8 oz bowtie (farfalle) pasta, uncooked

For the Cheese Toppings

  • 1/2 cup ricotta cheese Can be replaced with cottage cheese.
  • 2 oz mozzarella cheese, shredded (about 1/2 cup)
  • 1/4 cup parmesan cheese, any style (shaved, shredded, or grated)
  • 1/4 cup fresh parsley, chopped For garnish.

Instructions
 

Cooking the Soup

  • Heat a 4.5-quart soup pot over medium-high heat. Add olive oil and let it heat until it shimmers.
  • Add the ground beef, diced onion, and minced garlic. Sauté until the beef is fully cooked and the onions are soft. Drain excess fat if needed.
  • Stir in the diced tomatoes with their juice, tomato sauce or puree, and tomato paste. Pour in the chicken broth, add Italian seasoning, sea salt, and black pepper.
  • Add the uncooked bowtie pasta to the pot. Raise the heat to high and bring the mixture to a boil.
  • Once boiling, reduce the heat to medium and let it simmer for about 10 to 15 minutes, stirring regularly.
  • If the soup is too thick, gradually add water or broth until the desired consistency is reached.
  • Allow the soup to cool slightly before mixing in the ricotta, mozzarella, and parmesan cheeses. Alternatively, serve cheese on the side.
  • Garnish each serving with freshly chopped parsley.

Notes
