Ingredients
  

Pasta Ingredients

  • 12 ounces your favorite pasta (penne or fusilli work well)

Sausage Ingredients

  • 1 pound sausage (chicken or turkey for a lighter option) Choose quality sausage for better flavor.

Vegetable Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell pepper, chopped (any color)
  • 1 cup cherry tomatoes, halved

Liquid Ingredients

  • 2 cups chicken broth
  • 1 cup heavy cream For a creamier sauce, let the dish rest after cooking.

Spice Ingredients

  • 1 tablespoon Cajun seasoning Adjust to taste.
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper

Cheese and Garnish

  • 1 cup shredded cheese (cheddar or pepper jack) Personalize with your favorite cheese.
  • to taste Fresh parsley, chopped for garnish

Instructions
 

Cooking the Sausage

  • In a large pot, heat a splash of olive oil over medium heat. Add the sausage and cook, breaking it into pieces, until browned. Remove it from the pot and set aside.

Cooking the Vegetables

  • In the same pot, add the onions and bell peppers. Sauté for about 5 minutes until tender.
  • Stir in the garlic, Cajun seasoning, smoked paprika, salt, and pepper. Cook for another minute until fragrant.

Cooking the Pasta

  • Add the pasta, chicken broth, and heavy cream. Bring the mixture to a boil.
  • Reduce heat to a simmer and cook for about 12-15 minutes, stirring occasionally, until the pasta is cooked and has absorbed some liquid.

Combining Ingredients

  • Once the pasta is done, stir in the cooked sausage, cherry tomatoes, and cheese. Mix until the cheese has melted and everything is well combined.
  • Taste and adjust the seasoning if needed. If the dish is too thick, add a little more broth or cream to reach desired consistency.
  • Serve hot, with a sprinkle of fresh parsley on top.

Notes
