  • 1 pound 93/7 ground beef Lean ground beef for lower fat content
  • 3 cups thinly sliced cabbage Adds crunch and nutrition

  • 2 cups chicken stock Low-sodium recommended

  • 2 packages instant ramen noodles Seasoning packet discarded
  • 1 cup matchstick carrots Adds crunch
  • to taste thinly sliced scallions, for garnish Fresh garnish

Instructions
 

Cooking the Beef

  • Heat a Dutch oven over medium-high heat and add the ground beef. Cook until browned, breaking it apart with a spatula.

Adding Vegetables

  • Stir in the sliced cabbage, red bell pepper, and minced garlic. Cook for about 3-4 minutes, until vegetables soften.

Creating the Broth

  • Pour in chicken stock, then add soy sauce and hoisin sauce. Bring to a boil.

Cooking the Noodles

  • Add the instant ramen noodles, submerging them in the broth. Cover and simmer for 5-7 minutes, stirring occasionally.

Finishing Touches

  • Stir in the matchstick carrots and let sit for an additional 1-2 minutes. Serve garnished with scallions and sesame seeds.
