Instructions
Heat olive oil in a large skillet over medium-high heat.
Season the chicken with salt, pepper, smoked paprika, and garlic powder. Add to the skillet and sear until golden brown, about 5-7 minutes.
Remove the chicken from the skillet and set aside.
Pour chicken broth into the skillet, scraping up any brown bits. Stir in honey BBQ sauce and optional soy sauce, and simmer for 2-3 minutes.
Add uncooked penne to the sauce, then add enough water to cover the pasta. Stir gently, then cover with a lid.
Simmer for 12-15 minutes, stirring occasionally, until the pasta is tender.
Return the chicken to the skillet, stir to combine, and let simmer for another 2-3 minutes.
Adjust seasoning to taste and serve, garnished with chopped parsley and cheese.

Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop, adding a splash of broth if necessary.
