  • 1 pound shrimp, peeled and deveined Use medium to large shrimp for best results.
  • 1 cup orzo pasta
  • 3 cups chicken or vegetable broth Vegetable broth can be used for a vegetarian option.
  • 1 cup grated Parmesan cheese Preferably freshly grated for better flavor.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cups fresh spinach
  • to taste Salt and pepper
  • for garnish Fresh parsley Chopped, for serving.

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and red bell pepper. Sauté until the onion becomes translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for an additional minute, until fragrant.
  • Add the orzo to the skillet, stirring to combine with the vegetables.
  • Pour in the broth and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 10 minutes.
  • After 10 minutes, add the shrimp and fresh spinach, stirring to incorporate.
  • Cover the pan again and cook for an additional 3-5 minutes, or until the shrimp are pink and cooked through.
  • Remove the skillet from the heat and stir in the grated Parmesan cheese. Mix well until the cheese melts and creates a creamy sauce.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.
