  • 4 chicken thighs Skin-on or boneless can be used
  • 1 can coconut milk (approximately 13.5 oz) Regular coconut milk works well
  • 2 tablespoons lime juice Freshly squeezed for best flavor
  • 2 cloves garlic, minced Fresh garlic recommended
  • 1 tablespoon ginger, minced Fresh ginger recommended
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil

For Serving

Instructions
 

Preparation

  • Heat the olive oil in a large pan over medium heat.
  • Season your chicken thighs with salt and pepper.
  • Brown the chicken thighs for about 5 to 7 minutes on each side until golden brown.
  • Remove the chicken from the pan and set aside.

Cooking

  • Sauté the minced garlic and ginger in the same pan for about a minute until fragrant.
  • Add the coconut milk and lime juice, stirring to combine.
  • Return the chicken to the pan, ensuring it’s submerged in the sauce.
  • Cover the pan and reduce heat, letting it simmer for 20 to 25 minutes.
  • Check for doneness, ensuring the chicken reaches an internal temperature of 165°F (75°C).

Serving

  • Serve the One Pan Coconut Lime Chicken over rice or alongside steamed vegetables.
  • Garnish with fresh herbs and lime wedges, if desired.
