  • 4 pieces boneless, skinless chicken breasts You can also use thighs for a juicier option.
  • 1/4 cup honey
  • 1/2 cup BBQ sauce
  • 1 cup rice (white or brown) Adjust cooking time if using brown rice.
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt To season the chicken.
  • 1 teaspoon pepper To season the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup mixed vegetables (optional, like bell peppers or broccoli) Add during the last 5 minutes of cooking.

Preparation

  • Heat the olive oil in a large pan over medium heat.
  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  • Sear the chicken in the pan for about 5-7 minutes on each side until golden brown.
  • Remove the chicken and let it rest on a plate.
  • Add the rice to the pan and stir for about a minute.
  • Pour in the chicken broth, followed by the BBQ sauce and honey; stir to combine.
  • Return the seared chicken to the pan, placing it on top of the rice mixture.
  • Cover the pan and reduce heat to low; let it simmer for about 20-25 minutes.
  • If using vegetables, stir them in during the last 5 minutes of cooking.
  • Serve the chicken over the rice, drizzling with sauce.

Notes

For a flavor boost, marinate the chicken in seasoning and honey BBQ sauce for at least an hour before cooking. Leftover chicken and rice can be transformed into burritos for lunch.
