  • 1/2 cups Greek yogurt Let come to room temperature
  • 2 large eggs Let come to room temperature
  • 3 tablespoons lemon juice Freshly squeezed
  • 1 lemon zested Add zest for flavor

Preparation

  • Preheat your oven to 350°F (175°C) and oil a 9-inch round pan.
  • In a large bowl, mix together the dry ingredients: all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  • Create a well in the center of the dry ingredients and pour in the olive oil, Greek yogurt, and eggs. Whisk until smooth.
  • Add the lemon juice and zest, stirring gently until fully incorporated.
  • Pour the batter into the prepared pan, ensuring even distribution.

Baking

  • Bake in the oven for about 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool for at least 10 minutes in the pan before transferring it to a wire rack to cool completely.

Notes

Serve with Greek yogurt and berries or dust with powdered sugar. Store leftovers in an airtight container or freeze for longer storage.
