Main Ingredients

  • 2 cups shredded carrots Freshly grated for better flavor
  • 1.5 cups cottage cheese Can be substituted with Greek yogurt
  • 2 large eggs Can be replaced with flax eggs for vegan option
  • 1 cup rolled oats
  • 0.75 cup almond flour Can substitute with oat flour for nut-free
  • 0.5 cup unsweetened applesauce
  • 0.75 teaspoon baking powder
  • 1 teaspoon cinnamon Adjust spices to taste as desired
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon vanilla extract
  • 0.5 cup chopped walnuts Optional, can substitute with pumpkin seeds for nut-free
  • 0.25 cup raisins Optional
  • a pinch none salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking dish by lining it with parchment paper or greasing it.
  • In a large mixing bowl, combine the cottage cheese, eggs, and applesauce. Blend together until you achieve a smooth consistency.
  • In another bowl, mix the shredded carrots, rolled oats, almond flour, baking powder, cinnamon, nutmeg, and a pinch of salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until everything is evenly combined.
  • If using, fold in walnuts and raisins at this stage.
  • Pour the batter into the prepared baking dish and spread it evenly.

Baking

  • Bake for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bars to cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.

Serving

  • Once cooled, slice into bars and enjoy!

Notes
