  • 1/2 cup nut butter (like almond or peanut butter) Choose your favorite nut butter.
  • 1/2 cup honey or maple syrup Can be substituted with other sweeteners.
  • 1/2 cup protein powder Choose your favorite flavor.
  • 1/4 cup chocolate chips or dried fruit Optional for added texture and taste.
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Preparation

  • In a large bowl, combine the nut butter and honey (or maple syrup). Mix well until smooth and fully combined.
  • Stir in the protein powder, rolled oats, and a pinch of salt. Mix until everything comes together into a sticky dough.
  • If using, fold in the chocolate chips or dried fruit for added texture and taste.
  • Scoop a tablespoon of the mixture and roll it into a ball. Place the balls on a baking sheet lined with parchment paper.
  • Continue scooping and rolling until all the dough is used up.
  • Chill the cookies in the refrigerator for at least 30 minutes or until they firm up.

Storage

  • Once they are set, store them in an airtight container in the fridge or freezer for later snacking.
