Ingredients
  

For the cheesecake filling

  • 1 cup cottage cheese Blend until smooth.
  • 1/2 cup creamy peanut butter Choose natural variety without added sugars or oils.
  • 1/4 cup honey or maple syrup Adjust sweetness to liking.
  • 1 teaspoon vanilla extract
  • 1/4 cup Greek yogurt Can be substituted with dairy-free yogurt.
  • 1 tablespoon maple syrup For extra sweetness, optional.

For the crust

  • 1 cup crushed graham crackers or a gluten-free alternative
  • 2 tablespoons melted coconut oil
  • 1 pinch salt

Garnish (optional)

  • Chopped nuts or chocolate chips For garnish, optional.

Instructions
 

Preparation

  • Blend the cottage cheese in a food processor until smooth.
  • Add the creamy peanut butter, honey or maple syrup, vanilla extract, and Greek yogurt to the blended cottage cheese. Blend until well combined.
  • In a separate bowl, mix the crushed graham crackers with the melted coconut oil and a pinch of salt. Stir until the mixture resembles wet sand.

Assembly

  • In clear individual cups or jars, layer the graham cracker mixture at the bottom and pack it down gently to form a solid crust.
  • Spoon the peanut butter cheesecake mixture over the crust layer, filling each cup about three-quarters full.
  • If desired, drizzle a little extra honey or maple syrup on top for added sweetness.
  • Optionally, garnish with chopped nuts or chocolate chips.

Chilling

  • Place the cups in the refrigerator to chill for at least two hours before serving.
