Preparation

  • In a large mixing bowl, combine the creamy peanut butter, honey (or maple syrup), vanilla extract, and salt. Mix well until smooth.
  • Gradually add in the cocoa powder and rolled oats. Stir until fully combined and the mixture holds together.
  • If you want, fold in the chocolate chips for an extra chocolatey kick.
  • Using your hands or a spoon, form the mixture into small balls or flatten them into cookie shapes on a parchment-lined baking sheet.
  • If desired, roll the cookies in extra oats for a decorative touch and added texture.
  • Place the baking sheet in the refrigerator and let the cookies set for at least 30 minutes, or until firm.
