  • 1 cup creamy peanut butter Use creamy peanut butter for best texture.
  • 1/2 cup honey or maple syrup Maple syrup can be used as a vegan alternative.
  • 2 cups rolled oats Quick oats can be used for a different texture.
  • 1/2 cup unsweetened cocoa powder Ensure it is unsweetened for balanced sweetness.
  • 1/4 cup coconut oil Melt before mixing.
  • 1/2 teaspoon vanilla extract Adds flavor.
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or nuts Optional for added texture.

Instructions
 

Preparation

  • In a medium saucepan, combine peanut butter, honey or maple syrup, cocoa powder, and coconut oil.
  • Stir over low heat until melted and smooth.
  • Remove the saucepan from heat and stir in the vanilla extract and salt.
  • Add the rolled oats, mixing until everything is well combined.
  • If using, fold in chocolate chips or nuts at this stage.

Assembly

  • Line a baking sheet with parchment paper.
  • Use a cookie scoop or tablespoon to drop spoonfuls of the mixture onto the prepared baking sheet.
  • Flatten each cookie slightly with the back of a fork if desired.

Setting

  • Place the baking sheet in the refrigerator for about 30 minutes or until the cookies firm up.
  • Once firm, transfer the cookies to an airtight container.

Notes

For a healthier twist, you can substitute honey or maple syrup with agave nectar or use mashed bananas. Cookie texture and flavor can vary with different nut butters.
